Hot and Sour Prawn Soup From our Thailand Travel

A delicious sour soup-flavored with fresh lemongrass and aromatic kaffir lime leaves.
1-5 crushed hot chilies
1/2 cup sliced mushrooms
1 stalk lemongrass (slice into 3cm long pieces)
1/4 cup sliced onion
1/4 cup peeled, sliced galangal
1/4 cup sliced tomatoes
3 kaffir lime leaves, thinly sliced
2 teaspoons lime juice
2 tablespoons fish sauce or soy sauce
1/2 teaspoon sugar
1/2 tablespoon shrimp chilli paste
2 cups water
5 shrimp (take the heads off and keep) – Shrimp may be replaced by chicken, pork, tofu, fish or mixed seafood
1 tablespoon chopped scallion
1 stem coriander plant
1/4 teaspoon salt
2 leaves Thai parsley
1. Put water in a pot and heat until boiling.
2. Add lemongrass, galangal, shrimp chilli paste, shrimp heads and onion. Cook on med- high heat until fragrant . (5- 10 minutes).
3. Add tomatoes, shrimp meat and mushrooms. Simmer over medium heat until the shrimp is cooked, approximately 5 minutes. When done, add fish sauce, salt and sugar. Stir thoroughly.
4. Add lime juice, scallions, Thai parsley, coriander and lime leaves. If not spicy enough, add hot chilies. Serve with rice.
