The cuisine in Nicaragua is a mixture of indigenous and Spanish/Creole food. Home-style cooking dominates and our local guide will introduce you to dishes such as Gallo Pinto (rice and beans seasoned with coriander, onions and Worcestershire sauce), Vigoron (a salad made of yucca, chicharron, cabbage, and tomato), Nacatamal (ground corn prepared into dough and filled with a mixture of chicken, rice, potatoes, tomatoes, onions and sweet pepper), and the region's renowned fried plantains.

Enjoy the delicious coastal seafood dishes such as ceviche. Vegetarians will be well catered for thanks to an abundance of fresh vegetables and fruits and those who prefer more Western-influenced food will find that there are generally Western dishes available.
