One of the great pleasures of Chile is the wonderful cuisine and the world-renown wines. Although our trip takes place in some of Patagonia's most remote spots, we nevertheless take full advantage of the country's culinary tradition and meals are a definite highlight of our trip. Some of our meals will be taken in restaurants, others in cozy mountain refugios, and still others in the wilderness around a campfire. The kind of Chilean delights that you will sample during your trip include: fresh wild salmon, scallops, king crab, conger eels and mussels, whole lamb barbecued over an open fire, Cazuela de Ave (a kind of chicken casserole cooked with pumpkin, beans, & paprika), empanadas, and curanto (a dish cooked underground that includes such ingredients as shellfish, fish, meat, potatoes, potato bread, chapaleles, and vegetables). Accompanying these delicious dinners will be a selection of Chile's finest wines, including Merlots and Cabernets from the Maipu Valley, Colchagua Valley & Curico, and wines made from the world-renown Carmenere grapes which only exist in Chile (Carmenere grapes were once grown in France but a disease wiped them from the continent). Guests will also have plenty of opportunities to try Chile's national drink: the Pisco Sour, a margarita-link drink that is made from brandy.

Our Chile trip price includes all meals except dinner on day 1 and lunch on day 2. We gladly cater to the need of vegetarians and others with special dietary requirements.
