INSTRUCTION Our Mexican cooking school includes cooking classes to prepare the following meals:
Class 1: - Introduction to the kitchen - Guacamole - Fish ceviche "Zihuatanejo style" - Shrimp “al ajillo” - Mexican rice - Rice water “horchata” - Coconut flan
Class 2: - Salsa macha - Raw sauces (green & red) - Fava bean and nopal salad - Green pozole - Agua de Jamaica - Pecan pie
Class 3: - Mayan sauce - Molcajeteadas salsa - Pre-Hispanic corn soup - Shrimp pancakes with mole - White rice with fried bananas - Lemon water with chia - Sweet pumpkin desert
Class 4: - Pico de gallo "tropical" - Jicama, mango and papaya salad - Red Snapper "a la talla" (marinated and spiced) - Refried beans with hoja santa or aculyo and chipotle chile - Cheese, mushroom, and squash blossom quesadillas - Traditional Mexican sorbet

Chef Hugo Gutierrez is Executive Chef at Haramara Retreat, one of the leading chefs in Mexico, and a recent inductee to the Academie Culinaire de France. His expertise is honed from traditional Mexican cooking at his mother’s knee followed by formal training as an apprentice to a renowned French chef in Mexico City. His style of food is best described as "organic, rustic Mexican", using only the freshest local ingredients for their healthy and natural traits.
