OVERVIEW - MEXICAN COOKING VACATIONS We are honored that American Airlines' in-flight magazine American Way has featured our Mexico Culinary Retreat. Read about it here.
Imagine learning to cook delicious, healthy, gourmet Mexican cuisine with a top Mexican chef. And then picture yourself cooking in a kitchen nestled in the Mexican jungle overlooking the Pacific Ocean. Need more inspiration? There’s a margarita waiting for you at the end of your class, or just the freshest fruit juice you can imagine.
Cooking with Chef Hugo, one of the leading chefs in Mexico, and a recent inductee to the Academie Culinaire de France, you will learn the fundamentals of traditional Mexican cooking with a healthy seafood and vegetarian twist, using locally grown, organic ingredients. When you are not cooking, you’ll enjoy daily yoga, spa treatments, and excursions with Chef Hugo to local markets - or you might choose to do nothing at all!
You will stay in stunning, rustic cabanas nestled in the jungle and cooled by the ocean breeze. The luxurious cabanas feature comfortable beds with hand woven sheets, oil lamps and candles for softly lit evenings, and original and uniquely designed individual bathrooms. Some cabanas have private hammocks for lazy afternoon siestas, and all have either ocean or jungle views - or both. (But none have electricity, so be prepared to enjoy the simplicity and tranquility of an unwired world.)

INSTRUCTION Mexican food is a blend of exotic pre-Hispanic indigenous ingredients and European influence from the longtime Spanish occupation. Corn and beans are staples, as are the added flavors of many kinds of peppers. Executive Chef Hugo Gutierrez, our instructor for the week, will focus on traditional Mexican recipes with a healthy seafood and vegetarian twist, using local and organic ingredients whenever possible.
